if I choose the language english , after the order , the email received in which language is it sended ?
It is ever in default language ? Or depend from the language choosen ?

In the cart, English is the default language.
That means it is default until another language is selected. Then that language is what is used.
After a new language is selected, the only time English is used is if there is no entry in the alternative language, then the English variable is used.
In catalog and admin, you can set a new default like Italian, and that be become the default user language.
If your customer orders in Italian, that is what the Emails should also be in.
